HACCP & Food Safety Glossary

Plain-English definitions of HACCP, FSANZ, Food Safety Program, food safety guidelines and other food safety terms used by Australian kitchen teams.

FSANZ

Food Standards Australia New Zealand (FSANZ) is an Australian government agency. It develops and maintains the Australia New Zealand Food Standards Code, setting regulations for food safety, composition, labeling, and hygienic handling to protect public health across both nations.

Food Safety Program (FSP)

A food safety program is a written document outlining how a food business identifies, controls, and monitors food safety hazards specific to its operations. Based on HACCP principles, an FSP is a legal requirement for high-risk Australian food businesses under state legislation.

HACCP

Hazard Analysis Critical Control Point (HACCP) is an internationally recognised, preventive management system for food safety. It systematically identifies, evaluates, and controls physical, chemical, and biological hazards throughout food production to prevent contamination before it occurs.

Food Safety Supervisor (FSS)

A food safety supervisor is a designated individual within an Australian food business trained to recognise and prevent food safety hazards. Certified through accredited training, an FSS oversees daily food handling, trains staff, and ensures the business complies with relevant food safety standards.

2-hour/4-hour rule

The 2-hour/4-hour rule is an Australian food safety guideline managing potentially hazardous food in the temperature danger zone (5°C–60°C). Food exposed for under 2 hours can be used or re-refrigerated; between 2–4 hours must be used immediately; and over 4 hours must be thrown away.

HACCP meaning

HACCP stands for Hazard Analysis Critical Control Point. It refers to a structured methodology used globally to proactively analyse processes, pinpoint high-risk steps (Critical Control Points or CCPs), and enforce strict control measures to guarantee safe food.

HACCP certification

A HACCP certification is an official endorsement awarded by an independent, accredited auditor. It verifies that a business has developed, implemented, and maintained a robust food safety management system that meets rigorous HACCP standards.

HACCP plan template

A HACCP plan template is a pre-formatted framework designed to assist food businesses in building a customised HACCP plan. It guides users through mapping process flows, identifying hazards, setting critical limits, and outlining monitoring and corrective procedures.

Food safety software

Food safety software is a digital platform designed to automate food safety tasks and workflows. They streamline task management, record-keeping, corrective action tracking, and temperature logging, replacing manual paper records with secure digital documentation.

Food safety management software

Food safety management software are centralised digital systems that manage end-to-end food safety compliance. They combine automated monitoring, digital checklists, staff training records, and audit logs to ensure total adherence to food safety standards.

Food safety compliance software

Food safety compliance software is specifically built to help businesses align with local and international food laws (like FSANZ, HACCP). It simplifies audits, tracks corrective actions, and provides real-time reporting to maintain audit readiness.

HACCP software

HACCP compliance software are digital tools purpose-built to digitise the HACCP process. They enable businesses to map workflows, track Critical Control Points (CCPs), monitor critical limits, log corrective actions, and generate audit-ready reports electronically.

Food traceability software

Food traceability software are digital tools that track food products and ingredients throughout the supply chain - from farm to table. They enable rapid batch tracing, instant recall execution, and full visibility over product origins and movement.

Supplier management software

Supplier management software is a system used to manage vendor compliance, certifications, quality checks, and performance metrics. It ensures incoming raw ingredients and products consistently meet strict food safety and regulatory standards.

Wireless temperature monitoring

Wireless temperature monitoring is often an automated sensor technology that continuously tracks environmental and equipment temperatures (chillers, freezers). It alerts staff instantly to temperature breaches, ensuring perishable foods stay within safe critical limits without manual checks.

Food safety app

A food safety app is a mobile or tablet application enabling kitchen staff to complete daily safety checklists, record temperatures, report incidents, and maintain compliance records on the go, replacing traditional paper logbooks.
